Cashew crazy

What’s your favourite dried fruit? Your favourite nut? This recipe lends itself to some experimentation with different fruit and nut combos in the quantities suggested below.  Let us rusk lovers know what worked for you!

300g butter
250  ml sugar (the fruit adds sweetness)
2 large eggs, lightly beaten
500ml buttermilk
500g wholewheat flour
500g white flour
35ml baking powder
35ml baking soda (bicarbonate of soda)
1 cup finely chopped dried cranberries (see a tip for chopping dried fruit)
2.5 cups coarsely chopped cashews, unsalted
2.5 cups muesli (use one with mostly oats and no dried fruit)

Melt the butter and sugar together in a saucepan.  Set aside to cool.  Add the buttermilk and once the mixture is cool, add the eggs.

Mix the dry ingredients, cranberries, muesli, and cashews together.  Stir in the egg mixture.  Press evenly into a large greased baking sheet.  Bake in preheated oven at 180 degrees for 25 – 30 minutes.

Cut into rusks in the pan.  Dry out in a very low oven for about six hours.
