Your Family, May 1987

Your Family is (was?) a magazine. They ran a “Favourite Recipe Competition.” This was submitted by Ms. P. Mayger, Linden, South Africa. If you can’t find self-raising flour check out the tip under the “Alternatives” heading.

1 kg self-raising flour
8 ml baking powder
5 ml salt
250 ml muesli
250 ml Allbran flakes
100 g raisins
100 g sultanas
75 ml sesame seeds
100 g dessicated coconut
400 g brown sugar
500 ml yoghurt
500 g butter melted (or marg)
2 eggs, beaten

Combine all dry ingredients well.
Add yoghurt and butter to beaten eggs.
Mix all together.

Press dough evenly into a baking sheet.

Bake at 180 C (350 F) for 50 – 60 minutes.

Use any of the cutting methods for rusks. Dry out in a low oven after cutting.

Makes about 50.
