Healthy Seed & Bran

500g (540ml) butter
300g (350ml) brown sugar
2 large eggs, lightly beaten
500ml buttermilk
1kg self-raising flour. If you can’t find self-raising flour check out the tip under the “Alternatives” heading.
10ml baking powder
200g (1 000ml) All Bran Flakes
80g (500ml) digestive bran
150ml raisins
100ml sunflower seeds
30ml linseeds
50ml pumpkinseeds
30ml sesame seeds

Melt the butter and sugar together in a saucepan.  Set aside to cool.  Add the eggs and buttermilk.

Sift the flour, baking powder and 5ml salt together.  Add the cereal, bran, raisins and seeds.  Stir in the egg mixture.  Shape into balls and place next to each other in a greased roasting pan.  Alternatively press dough evenly into a baking sheet.

Bake in preheated oven at 180 degrees for 45 to 50 minutes.

Use any of the cutting methods for rusks. If you rolled them into balls before baking you’ll break those up by hand instead of cutting them.  Dry out in a low oven after cutting.

      One can readily enhance the nutritional value of the flour by using up to half of the quantity with whole wheat flour. For the white flour I use organic unbleached which I know doesn’t enhance the nutritional value, but I feel at least I’m doing something 😊

    Would rather use Bran Rich self-raising wheat flour and Natreen classic granule sweetener. Much more healthier.

      Great if you’re able to get the bran rich SR flour as it’s not available everywhere. Personally I steer clear of artificial sweeteners though.
