Your Family, May 1987
Your Family is (was?) a magazine. They ran a “Favourite Recipe Competition.” This was submitted by Mrs. L. Bright, Malvern, Natal, South Africa. If you can’t find self-raising flour check out the tip under the “Alternatives” heading.
1 kg self-raising flour
10 ml baking powder
5 ml salt
500 g marg or butter
4 c digestive bran
125 ml dessicated coconut
125 ml sultanas
5 ml grated nartjie (clementine/mandarin) or orange peel
500 ml buttermilk
375 ml sugar
500 ml Rice Krispies
Sift flour, baking power and salt into a bowl.
Rub in marg/butter.
Add bran, cocnut, sultanas, and grated peel and mix well.
Beat together buttermilk, eggs and sugar and add to dry ingredients.
Mix to form a stiff dough.
Place dough in a greased roasting pan (2 inches/5 cm deep).
Press Rice Krispies into dough.
Cut into rusks with a wet knife.
Bake at 180 C (35o F) for 30 – 40 minutes.
Leave to cool and then separate into rusks.
Dry in a low oven about 4 hours or overnight.
Makes about 50.
