Karin provided this recipe. She and I shared a flat for eight years and then ended up getting married within two weeks of each other. During all those eight years never did she make me these rusks, so how can I believe this is a good recipe, huh? I suppose the fact that she’s actually a good cook might be trusted….

If you can’t find self-raising flour check out the tip under the “Alternatives” heading.

Mix together:

10 cups self raising flour
3 teaspoons baking powder
2 cups bran
(optional nuts/muesli, Karen adds about a 3/4 cup muesli)

Melt together:

375g marg or butter
2c sugar
1 c milk

Then add:

2 c milk (once the rest is melted together)
Mix dry ingredients with liquid.

Bake in a greased oven tray about 2 inches (5 cm) deep in a preheated oven at 170 – 180 for 45 min

Cut and dry out in cool oven (100C) for 3 – 4 hours.

Clearly you have not made them yet! I never made rusks back then because a) I never had the recipe and b) I am (still) not really a baker, more a main meal maker. Roll on Winter so that I can try out some of the other yummy looking recipes…
