Wholewheat Cheese

Your Family, May 1987

Your Family is (was?) a magazine. They ran a “Favourite Recipe Competition.” This was submitted by Ms. J. Belter, East London, South Africa. If you can’t find self-raising flour check out the tip under the “Alternatives” heading.

4 c self-raising flour
20 ml bicarbonate of soda
7 c wholewheat flour
1 c digestive bran
2 c sugar
10 ml salt
500 g butter
350 ml cheddar, grated
1.5 l buttermilk

Sift self-raising flour and bicarb together, and add wholewheat flour, bran, sugar and salt.
Rub in butter.
Add grated cheese.
Add buttermilk.

Mix together to form dough.
Shape mixture into small buns and place tightly in a greased roasting pan (2 inches/5 cm deep). Alternatively press dough evenly into a baking sheet.

Bake in preheated oven at 180 degrees for 45 to 60 minutes.

Use any of the cutting methods for rusks. If you rolled them into balls before baking you’ll break those up by hand instead of cutting them.  Dry out in a low oven after cutting.

Dry out overnight in a warm oven.

Makes about 35.
